omg i never posted my strawberry shortcake recipe! sorry. feel like you guys know how to make it tho, you just need biscuits and strawberries and whipped cream.
i did make an amazing dinner last night which i can’t take pics of anymore cuz now it’s gross-looking (but great-tasting) leftovers, but here’s what it is:
preheat the oven to 475. chop up some garlic, some potatoes, some green beans, some onions, some tempeh, some carrots, some tomatoes, and some apples (optional—they actually end up kinda weird lol) and put em in a big pan or semi-deep pyrex thing that you can put in the oven. put on a bunch of spices. i used minced rosemary (from our backyard), chile powder (not sure what kind cuz it was in an unlabeled plastic bag in our cabinet), and curry powder. put about half an inch of water in the bottom of the pan. you can also substitute some olive oil or coconut oil for some of the water. we were basically out of oil but we had a tiny bit of coconut oil which i used. put it in the oven for awhile, maybe 20-50 minutes or so. could even be 10 minutes more or something, not sure. make sure to mix it around every few minutes so everything gets evenly distributed.
it’s good with a grain, like rice or quinoa.

I’ve made/eaten this for the past two days, it’s great. But it’s all about the seasoning, so if you taste it and it’s not good, add more salt, hot sauce, peppers, whatever spices you have!
First heat up some olive oil in a sauce pan. Then add half a small onion, chopped. Add some salt, some pepper, wait a couple of minutes for the onion to slightly yellow/brown. Then add half a chopped bell pepper (I like green, but other colors work too). Then a cup of water, and a half a cup of dried bulgur wheat. At this point I add some more salt/hot sauce, etc. Cook on low heat with the cover of the sauce pan for 5 to 7 minutes, until the wheat absorbs all the water and gets to be a porridge like consistency. Stirring every once in a while, of course.
While the porridge is cooking, fry an egg and great some cheese (I’ve been using parmesan, but other cheeses work as well). When the wheat is cooked, taste it to make sure it doesn’t need more seasoning, the add the cheese, put the egg on top, and eat it!

first of all let me just say that turns out i’m a terrible food photographer. so everything tastes a lot better than it looks in my photos…
for the pepper:
1. sauté onions, garlic, mushrooms and spinach (all cut up into small pieces) in some olive oil. add a little salt, pepper, and maybe some sort of a red pepper if you want it to be a little spicy
2. cut a long light green pepper in half and remove the seeds, etc. fill each emptied half of the pepper with the spinach mixture and mozzarella cheese. i also put some pepper jack on top, but that’s excessive, and it’s probably better for you just to use one cheese instead of a lot of cheese…
3. bake the peppers in the oven for probably at least 10 minutes, until the cheese melts and juices start flowing out of the pepper
for the potatoes:
just boil them and then if you want put a little bit of butter and salt on them!
sorry there are not more numbers in this recipe, but i think really any amounts of ingredients will work!
